I really understand the 'tutorial hell' aspect you are talking about. Have you actually been turning any of the tutorials into a project of your own? Have a look at a few of our project tutorials, and see how you can actually personalise them. There are some folks that are improvising on them and turning them into usable real world use projects.

As your next step, I would be afraid that you might end up in 'open source hell', where you are gambling on finding some pleasurable and meaningful collaboration. As a possible solution, why not jump into our community at Developer_DAO of primarily open source developers, educators, designers and founders of all levels. I'm sure it would be a more human-to-human approach to find the types of projects you're looking for.
